Butter is a rich source of easily absorbed vitamin Butter also contains a number of anti-oxidants that protect against the kind of free radical damage that weakens the arteries. Vitamin A and vitamin E found in butter both play a strong anti-oxidant role. Butter is a very rich source of selenium, a vital anti-oxidant. Butter has appreciable amounts of butyric acid, used by the colon as an energy source.

The use of butter with a mix of oil, water or milk. People generally use safflower, olive or canola, with maybe some lecithin and flax seed oil. The USDA now recommends that healthy adults consume less than 65 grams of fat per day.
